The essential dates are larger than the Jericho�s Finest dates puffier appearance and they are a lighter brown colour due to their more relaxed skin. These dates should be eater shortly after purchase, once opened they should be stored in an airtight container and refrigerated. If you decide to keep them longer they may dry out but will still be ideal for cooking and baking.
